EVs, or "Effort Values", are basically points that you earn by defeating pokemon in the wild or owned by other NPC trainers
you gain them just like exp points except they are invisible
since you dont gain exp from battle frontier or battle tower or link and wifi battles you wont gain any EV points either. since rare candies dont actualy count as earning exp you wont get evs from using them either
Each Pokemon you defeat has a unique set of EVs they give out,from 1 to 3 EVs for any given stat.

notice when your pokemon levels up youl see a screen that show you by how much a stat has incresed?
e.g. ATK 148+1
well for ever four EV points you gain this increase goes up by 1 as well. For example, if you fight four Starly (which
give 1 Speed EV each), you gain 4 Speed EVs, which means that the +1 will go up to +2 when the pokemon levels up.
Sounds neat, right? But, of course, there are limits. A Pokemon can only gain a
total of 510 EVs, and of the 510 only 255 can be gained on any one Stat. 255 evs will up that stat by 63 points.
even if you gain 255 evs on a stat only 252 will be calulated in so youl be left with 3 free EVs, we can ignore thoses EVs for now.With that said, 252/252/6 is pretty much the most basic EV spread for a Pokemon,
adding 63 points to two stats and 1 point to one stat.
So yeah, it's very important. An un-EV trained Pokemon almost always falls to a
properly-EV trained Pokemon of the same level. Add in IVs and Natures, and
you've used your Pokemon to its fullest battling potential.
